Co-FounderTrevor, our head roaster, numbers guy, and in-house expert on how to turn raw coffee beans into a delicious cup of coffee. Trevor is the reason every bag tastes the way it should. He's obsessed with roast curves, spreadsheets, airflow, and squeezing every ounce of sweetness out of a coffee.

the Roastery
We roast our coffee in small batches right here in Waco, Texas. We roast our coffee to order, ensuring each bag reaches you at peak freshness and not weeks after production. Our roasting philosophy is simple: highlight what makes each coffee unique while keeping it approachable enough to enjoy every day. We spend countless hours dialing in roast profiles, tracking data, and tasting every batch so that consistency and quality never come down to chance.
Our current roasting vessels include two commercial roasters: the Valenta 7 & Valenta 15. Both are air-roasters, which provide a different flavor profile opposed to traditional gas roasters.
