Why Longshot?

We came up with the name Longshot on a road trip, when this whole thing still felt very unlikely.

Starting a coffee company felt like a longshot. But to us, a longshot isn’t about impossible odds, it’s about taking the shot anyway.

Longshot Coffee Roasters was built on the belief that great coffee should be approachable, welcoming, and part of everyday life, not reserved for experts or special occasions. We set out to roast exceptional coffee without the intimidation sometimes associated with specialty coffee, focusing instead on quality, transparency, and genuine connection.

Our philosophy is simple: roast exceptional coffee without the elitism, without the markup, and without the compromises.

Who Are We?

We’re Trevor & Juliana Davis, the husband and wife duo behind Longshot.

Trevor, our head roaster, numbers guy, and in-house expert on how to turn raw coffee beans into a delicious cup of coffee.

Juliana, in charge of the fun stuff such as marketing, social media, partner outreach and events.

Together, we bring more than just roasted coffee - we provide an experience for our customers and wholesalers alike. Always innovating, improving upon our processes, and learning new ways to show up best for you.

Our Roastery

We roast our coffee in small batches right here in Waco, Texas. We roast our coffee to order, ensuring each bag reaches you at peak freshness and not weeks after production. Our roasting philosophy is simple: highlight what makes each coffee unique while keeping it approachable enough to enjoy every day. We spend countless hours dialing in roast profiles, tracking data, and tasting every batch so that consistency and quality never come down to chance.

Our current roasting vessels include two commercial roasters: the Valenta 7 & Valenta 15. Both are air-roasters, which provide a different flavor profile opposed to traditional gas roasters.

Source green coffee from coffee farms with fair wages & good practices.

We carefully source coffees through trusted importers and partners who prioritize sustainability, transparency, and support long-term relationships with producers.
